Linux Mint is a popular Linux distribution built on Ubuntu code. The project started off as a version of Ubuntu with additional support for audio and video codecs. But it's grown into a solid, user friendly distribution of its own. While Linux Mint has its own package management system, it's compatible with Ubuntu repositories and many Debian packages.

As such, you can install and configure Linux Mint pretty easily on an Eee PC by running the Ubuntu script packs. Users have reported some moderate successes using this method. Or if you'd rather try a prebuilt package, check out LinuxMeeent4.

LinuxMeeent4 includes wireless drivers and some interface tweaks to make sure Linux Mint looks pretty on the Eee PC. There's no webcam or Ethernet support yet, but hopefully those issues will be addressed in a future release.
